Calculating the overall average is a trivial undertaking. See attached. I've also simplified your other fields (except for the dropdowns themselves). I note that you have numerous rows with dropdowns etc, but no corresponding text. If you leave those in, they'll skew the results regardless of whether they're completed. You can safely delete those rows without adversely affecting anything other than your layout - if you delete just the fields in those rows, the category averages won't work.
