HarryStokman1 found the Band-Aid!
In another post, HarryStokman1 said disable the Keyboard setting for "Show suggestions as I type" (Windows key\Settings\Devices\Typing). That worked for me!! Of course it is just a Band-Aid to work around this bug in Visio, but at least I now can use this latest version. Thank you HarryStokman1.
