Consider setting the tasks to manually scheduled and then you can type the dates to your heart's content.

If you want to use constrained, auto scheduled tasks and enter dates:

File > Options.
Display category.
uncheck the option "Edits to start and finish dates" in the section "Show Indicators and Option Buttons for:".
