Your estimated work and duration is available in the Baseline Work and Baseline duration field - assuming you have saved a baseline.

Project will calculate variance for the baseline data as compared to actuals.

Regarding updating for the entire project, turn on the Project Summary task (Gantt Chart Format Ribbon). It will show overall project data including % complete.
