If you are referring to summary task % complete calculations, no, you cannot exclude tasks from those calculations. You could create another project with the fabrication details and with cross project links to the construction project.

Physical % complete is not calculated by Project it is an optional method of calculating Earned Value. If you use durations only, then the only automatic method is % complete.
