How can I differentiate in the Gantt the schedule of activities that we surely will do (because the client has already given us the contract order) from activities that we may do (we are not sure that we will do them, because we have not a customer confirmation) ?

You can use a Flag field (Flag1 for example) and set the uncertain tasks to "yes". You can then filter on the Flag field.
