Can I change the "From" name in emails sent to me ?

Is it possible in Outlook 2003 to have the "From" name in emails sent to me displayed in another way or with a different name ?

My problem is that I get work emails from a lot of Asian countries with the "From" name displayed in their native characters e.g. Korean, Chinese and Japanese which I don't read.

What I would like to do is have the name display in English so I can sort and manage the emails more efficiently.
