If the message is no longer bold than it has been marked as read. This can occur by opening the message or right clicking on it and marking it as read. You best bet is to change your email password and password protect your Outlook data files.

The person could also read the email, then right click it and change it to unread, and the email would be bold again. Like Saigasmith said, your best bet is to change your password.
