Outlook will allow read receipts and appointment confirmation notices. They will tell you who read them or confirmed the appointment, as well as date and time.

To set read receipts for all emails go to:
File, Options, Mail, Tracking, and place a check in the check box labeled "Read receipt confirming the recipient read the message"
