Jackissimus,
I also currently use Outlook 2010 and create several new contacts a day. Normally i double click the already created contact in my contacts list and i'm able to edit all fields as it was from time of creation. Once a contact has been opened i can simply select details to add details. As far as customizing the contact form, i have not found anyway to do so. Hope this helps.
