I'm assuming you meant can this be done in Outlook. Im not certain it will do it with one click without a script.
However, once you have sent a reply to the document oyu can just click and drag the message directly to any sub folder you have created. Arguably Lotus Notes has more filing functionality however Outlook does have client side rules that could be manipulated to receive messages, reply with a predefined message and move messages into a specified folder.
