I have just started using OneNote on my Windows notebook and iPad. So far it has been quite intuitive and I can see my notebook on both machines--I understand how they are being synced.
However, we cruise frequently--frequently no internet available, and always exorbitant when it is (75c a min to VERY SLOW connection). There is no save button, so how can I be sure I can access my information when we are without internet? |

OneNote stores the information locally as well. Whenever you have a connection again it will sync the last changes you have made. So work offline and when returning to the 'fast' world OneNote will automatically sync when you are online again.
