... and I can't figure out why. Please help. I have tried using a different keyboard and searched through the auto correct options but don't see anything.

What exactly is happening:
When I type a apostrophe it types a €. If I hit back space it converts it to '. This is consistent with how auto correct functions. However, I can't seem to find this setting anywhere in auto correct options and I don't remember setting anything like this. This is only occuring in Office products like Word and Excel.

Have you tried clearing out ALL your autocorrect options and see if that fixes the issue.
Suggest you create a brand new template and remove the auto correct options from that template only in the first instance.
