When merging to a new document, there's a way to show at the bottom only of the last page of a mailmerge the total number of records?

If it's a letter merge and there is one page per letter, you could use a field coded as:
{={NUMPAGES}-{SECTION} \# ";;''{PAGE}"}
in the page footer.
