I can't see the google doc, but I suspect what you want is to turn on Wrap Text, at which will prevent cells from going beyond their width limit, and will make them taller instead. Depending on exactly how your formatting is set up you may get a sheet that will automatically expand rows vertically as needed, but if it doesn't then just highlight all relevant rows and auto-fit them(double-clicking a row boundary is usually the easiest way to do that).
