Securing Excel Files

We have developed a quoting schedule in Excel for our estimators with a lot of proprietary information in the various worksheets. We do not want this information to be available outside of our company. We can password protect the file but we need something more secure. We would like to prevent access to all the worksheets except the quote calculation worksheet and the quote letter worksheet. Also is it possible to do something to this file or on our server to stop it being e-mailed?
