I'm guessing no replies means "not possible to control access to the cached raw data in a pivot table".

However, I think I figured it out, which is to protect the sheet, turning off everything except the right to edit the pivot table and use auto-filter. This allows the user to filter, but, not to highlight and copy cell contents. This wouldn't stop a use from screen-shotting all the data, but, it's a very good option to limit access.
