You can set the proofing language for these terms as French or Latin. This is character-level formatting so it can definitely be applied to a single word or phrase.

The best way to do this would probably be to set some character styles for the languages and apply those to the terms. You can also set a style to not check spelling or grammar. I often use such a style for names.
