Default Italics and Fonts Mysteriously Vanish When a Word 2003 Document is Saved

I have written a large manuscript (500 pages) in Word 2003 using Georgia font (similar to Times New Roman). In certain places throughout the text I use italics for emphasis, while in other places I change paragraphs to Arial font.

Every time I open the document to make edits, some (but not all) of the italicized words change back to normal, and some (but not all) of the Arial paragraphs revert back to Georgia.

I am getting very tired of having to re-italicize text and re-format paragraph fonts back to Arial. Anyone have ideas regarding the cause of these reversions and how I can stop them?
