I use different line distances between different heading-levels and different leaders, for instance. But these settings don't stick when the ToC-field gets updated when the template is in use. Is there any way I could get these settings to stick?

The styles TOC 1 to TOC 9 control the appearance of the ToC. Modify those rather than applying formatting directly.
