Printing 1 Color and 1 B&W copy with 1 click
I'm trying to figure out if there is a way to set it up so that I can print one color copy (for customer) and one black and white copy (for our files) with one click in Word. I have tried to set up a Macro and it just printed 2 color copies, but it was my first attempt at using Macros, so I'm not sure if it was something I did wrong or if Macros just won't work for this. I'm running Microsoft Office Professional Plus 2019.

Each printer driver has its own unique settings so there isn't a one-size-fits-all solution to your question. It is possible to fiddle with the Windows API settings to work out what needs to change on your particular machine but it would require a lot of trial and error.
There was a good suggestion on this thread to set up two different printer drivers - one colour and one B/W and then print a copy to each driver. Redirecting The thread also points off to working with the API to figure out your specific settings if you wanted to try that approach

The thread I directed you to has a link which shows you how to change the printer via VBA
Changing the selected (current) printer in Word without changing the system default printer
