I know Excel gets slowed down by lots of formatting, especially Conditional Formatting. Maybe word has similar issues with lots of formatting changes.
@RRB As an experiment, make a copy of your document and clear all the formatting. Does the performance change? Also, are there any add-ins running? especially looking at non-Microsoft add-ins?
