I have a table in a downloaded document I must enter data into.
A couple of cells in that table when I write a few line the only spread across maybe 2/3 of the cell width. Then further lines start spreading the full width. How can I swiftly fix that so's all text is the same width within that cell? |

Check the indents on the ruler when you are in a problem cell. Adjust them.

To add to what Charles has said, you may also want to check the cell margin (if you haven't already done so).
