I renamed the build-in styles to my own needing. But Word keeps adding the build-in style name before whatever I write.

See picture attached. I want the style to be named Text, but Word adds Normal.

For other styles I can not even see what I named them.

Any idea how I can get rid of this part of the style name?

Built-in styles, e.g., Normal, Heading 1, Heading 2..., cannot be renamed. What you're ending up with is what's called an "alias" for the style. For example, say I'd rather call Heading 1 and Heading 2 H1 and H2. By adding them as aliases, I can then apply these styles by, say, going to the Apply Styles pane and entering H1 or H2. (I don't use the Styles section of the Home ribbon, but I believe there may also be a way of getting styles there to appear by their alias, not their native name. No idea how to do this, though.)

If you want a style that is basically Normal, which, incidentally is a sort of "master" style, then you could make a copy of Normal and call it what you want. If you want that new style to be the same as the actual Normal style, then when creating the new style, select Normal in the "Style based on" field.

With the "New Experience" you cannot as far as I know.

While you cannot rename built-in styles, you can give them "aliases." With the "New Experience" the alias will follow the built-in name if there is room.
You can use the Styles Pane which will display both.

The switch for the "New Experience" appears when you click on the little megaphone icon in the Title bar and scroll down. A restart is required after you change it.

At some point, this "New Experience" will be there whether we want it or not. Be sure to use the Feedback mechanism in Word with a sad face to let developers know what you think of this. (I do not think any of them actually use Word.)
How do I give feedback on Microsoft Office?

You can hide the built-in stylename by showing your styles pane (Ctrl-Alt-Shift-S) and clicking the Options button in the bottom of this pane. Check the option that says "Hide built-in name when alternate name exists"

Well, I tried that: nothing changed, neither with the new nor old experience.

Hiding the built-in style names appears to work only in the Styles pane. The style gallery on the Home tab continues to display both the alias and the original style name.
