The colour change works for me but it does depend on the format I choose. When you copy the graph and choose to Paste Special as a link, you will see a choice on which format should be used.

If I choose Microsoft Excel Chart Object - colour changes work
If I choose Microsoft Office Graphic Object - colour changes don't work.
