We need more information.

What do you mean by "middle text?"

Heading styles can be collapsed. That means that any body text between the heading and the next heading is hidden from view (and does not print).

Select the text you want to hide and press Ctrl+Shift+H to hide it.

If you are displaying hidden characters, you will still see it.

This has nothing to do with Heading 1.

that's helpful thank you very much!

Is there no way to do it with headings or something similar to them? so that only selected parts would be opened or disclosed, because this method even if good enough, it would open all parts of large document with ctrl+*,..

and from different scenario if i put inception loops like/after thoughts that i would reorganize later it would look like text(text(middle text)text)text, so lets say i want that (middle text) to be an optional and not immediately displayed after ctrl+*, possible?

You can select the area where you would want it revealed and use Ctrl+Shift+H again to toggle or Ctrl+SpaceBar to remove direct formatting.

Again, you can use the headings to collapse large areas of text in separate paragraphs.

Building on Charles' suggestion, perhaps a character style for the show/no show text? I'm imagining changing the definition from hidden to not hidden would then hide/show the styled text.

The text is only hidden if the user doesn't display hidden text. It is better to use a macro to insert alternative text rather than hide it.
