Default Advanced Find and Replace with Wildcards help needed

Good Morning
I've been looking at Find and Replace documentation but can't get to work what I'm trying to do.
I get documents that write attachments between single quotes, e.g. 'deedle dum and deedle dee'.
I want it written as »deedle dum and deedle dee.pdf. (I also format it with a different colour but once I can find it that shouldn't be the issue!)
From what I read, this should find it: (\’)(*)(\’) - but Word doesn't want to know it.
I have started on the replacement text but until I can find it, I can't test it. At the moment I have »\2.pdf but I suspect that will need refinement.
Thanks for any pointers anybody can give me.

'(*)'
replace with
»\1.pdf format>font>color>red

Thanks, Graham. I still get "No results found".
I'm typing the Find string and a couple of examples to tryit out, so I'm ruling out that it's a problem with the character I'm using.
Are Word versions known to have problems with this?
(Currently working on a not entirely compatible combo of 365 with Windows 7.)

Have you checked the Use Wildcards check box?
