Default Using Unicode for Document Properties

I have some templates for documenting engineering parts that contain advanced document properties that contain part numbers. The use of properties allows me to use the template for many different part numbers by just changing a property.

Recently, I have wanted to include some Unicode characters in these part numbers. Specifically, non-breaking hyphens. When I try to use non-breaking hyphens in a part number, I get what appears to be spaces.

Is there any way to use Unicode in a property that is scattered throughout my document?
