Change font in edit only doc

Hi . I have a protected Word document that others can enter information in selected fields. Generally the document is lengthy and so it would be great if when I received the completed form back that I could see changes easily. I thought of having the data that they input in a different color or font size but I don't know how to do that. Could use a bit of assistance on this.
