Your 'project name' text is in a coloured textbox in the header. I don't have any trouble editing it. The problem you're more likely to have if you're distributing this is that users will select the wrong thing to delete - they may end up deleting the entire graphic. You may do better to have a paragraph in the document body for users to type the project name, formatted with a unique Style name, then use a StyleRef field in the coloured textbox in the header referencing that Style name to replicate the project name there. That way your users won't need to access the header at all.

As for your system freezing, you might try repairing the Office installation (via Windows Control Panel > Programs > Programs & Features > Microsoft Office (version) > Change > Repair).
