Default Word spell check


When writing with Word I set up the page for Australian spelling. I make that the default language. All is good until I progress with my typing and for some reason it reverts to US language & spelling. I go through the process of going back to "Tools" and clicking language, making Australian English the default and saving the changes. But the document later reverts to US spelling again. How can I avoid US spelling altogether? I have an Apple iMac computer.
