Default Quick Parts in Footer adding < before field

I have created a document that needs to be protected with fillable fields. 2 of these fields need to be carried into the footer and I was using Quick Parts to accomplish this. I am able to do so however it is inserting < before the text. Otherwise it is working fine. Is there any way to get rid of the <? Even if I manually delete it as soon as a click off of the area it adds it back in.

I am using the style reference to format the text box to link the two if that helps.

Fillable fields = Content Controls?
If so, see Repeating Data Using Document Properties Content Controls and Other Mapped Content Controls
