Hi. I created a template using an existing food recipe. I saved it as food.dotx.

The problem is that when I use the template and do a save as. It insists on nominating the name of a food recipe not using the name of the template. I would have expected food.docx.

Where is it getting it's information from to use as a default name?

If you want documents created from Food.dotx to be named food.docx by default. Open the template in Word and change its built-in Title document property value to Food. Save and close the template and try again.

If the field is empty the filename is taken from the document text.

No it wasn't created from food.docx. It was created from Chicken Korma.docx. I saved it as food.dotx. I amused that was all I needed to do. That is how Microsoft tell people to create templates.

"Use an exsisting document"

It has decided to use the name of the document initially used to create it and that can NEVER be over ruled.

If you create a template from an existing document (all templates start that way - even if the document is blank) then you can use saveas to save as a template with any name you like. If you start from a saved document, you will be offered the name of the original document. You don't have to accept it.

No you are missing the point.

I have a document called AAA.docx I create a document template based on this and save it as BBB.dotx.

Every time I open the dotx and do a save as it will ALWAYS SAY save as AAA.docx NOT BBB.docx

It will NEVER use the name the DOTX was saved as, only the name of the original file the DOTX was used to create the DOTX

The original advice given is still valid.
Open the template for editing and change the Title property.
Or, change the title property in the document before you save it as a template.
New documents created from the template will keep the same title property. Otherwise, Word will often use the first line in the document as a proposed title if there is no title property.

Surely you can appreciate my frustration at having a project due in mere hours and not being able to do what I need to do. In this economy where every job is as precious as gold, failure is not an option. As for taking time to learn the interface, my good sir, I have spent a good deal of time doing just that, but this ribbon thing has gotten me truly baffled, for lack of a more appropriate term. I do however appreciate your help - and reluctantly accept your admonishment.

That is what I needed. I needed access to the document property. The save as had to store it somewhere.

First, the Ribbon interface was introduced more than ten years ago. Yes, changing to it has frustrated many an experienced Word user, but ten years? Word 2007 has the worst implementation; Word 2010 was a huge improvement.

To get to the title property...
Pizza button (Office button) > Properties > Advanced Properties > Summary (tab)

You can display the Document (Properties) Panel using the Developer Tab. (button on far right)
