With Word closed, locate and rename the normal template - If you have not changed the default location enter or copy
%appdata%\Microsoft\Templates to the address box of Windows File Explorer and you will be taken to the folder that contains the default template - which for Word 2016 is normal.dotm. Note that this folder is normally hidden. Restart Word and Word will create a new default template. Open that template in Word. Create or modify the two styles that you require and apply the default to the cursor position. Type a character then delete it. Save and close the template. Note that Word has a variety of built-in styles which you will not be able to remove from the template. But you can display only the styles used in your document.

Adding to what Graham has said, the default template is named "Normal.dotm." That is the one you want to rename or delete with Word closed.

Note also that:
• you can't delete any of the built-in Styles that you find in the Normal template; and • deleting/editing a Style in a template has no effect on documents already using it unless those documents have the 'Automatically update document styles' option set (see under Developer>Document Template>Templates.
