Windows 7 64bit Office 2016 for Mac keeps getting the wrong date for the automatic date

If the behaviour is inconsistent, that suggests a faulty Office installation or OS. Repairing either on a Mac is not for the faint-hearted. With Office, you'd need to uninstall & reinstall. For the OS - talk to a Mac specialist.
