Word 2013 Styles

Management if the styles doesn't seem very intuitive.

When I open up a new document I want one default style and only see the ones that i created in the Style ribbon. So if i only have one style there's one showing.

Is this do-able?

If you are referring to the Style gallery on the Home tab, note that you can right-click an individual style and choose Remove from Style Gallery. Note that doing that only affects the current document. To force these changes on new documents, you will have to modify your template.

Every document has many, many, styles. They may or may not appear in the quick styles gallery. That gallery is a tool to allow you to easily apply some styles, but does not come close to listing those in the document.
