You can certainly assign keyboard shortcuts to styles, but it is probably better not to re-assign shortcuts which might be useful.

Click the arrow at the right end of the QAT (Quick Access Toolbar) and select 'More Commands' from the next dialog check Customize keyboard shortcuts Styles are near the bottom of the Categories list.
