According to Word Help:

Capitalize text

You can capitalize letters by changing their case, by applying small capital or all capital formatting, or by creating a large letter at the beginning of a paragraph. Choose one of the following:

Vary the case of text
  1. Select the text you want to change.
  2. On the Format menu, click Change Case.
  3. Click the capitalization option you want.
Format text as small capital letters or as all capital letters
  1. Select the text you want to format.
  2. On the Format menu, click Font, and then click the Font tab.
  3. Select the Small caps or All caps check box.
Create a large dropped initial capital letter
  1. Click the paragraph that you want to begin with a "drop cap," a large dropped initial capital letter. The paragraph must contain text.
  2. On the Format menu, click Drop Cap.
  3. Click Dropped or In margin.
  4. Select any other options you want.

Default Case

In Word 2007:
On the Home tab of the ribbon, select the icon in the Font section that has Aa with a down arrow to the right (or, Alt+H,7). "Capitalize each word" is one selection from the drop-down menu. Alternately, select the text you with to put into title case, then press Shift+F3 (the F3 key, that is) to toggle among several cases.

I have to use this function quite a bit in my work, because certain documents have parts in all caps that I need in title case, so I created a keyboard shortcut for title case. With the text selected, mine is Alt+Ctrl+Shift+E.

Cheers!

Go to Amazon and search for the 'Microsoft Certified Application Specialist Study Guide' It has ALL the info you need to know to pass the MCAS 2007 exams and has a load of exercises on the included CD. AND it gives you a free online pre-test and 25% discount on one of the tests - If you want some more in depth knowledge of the individual Apps in MSO, then I recommend the 'Microsoft Step by Step' series!
