Using the Alt-F9 approach is simply a manual method for creating fields - I use it a lot. Of itself, though, that won't prevent Word updating the file path to match your system's UNC names. To do that, you'd have to use a path that points to a physical folder on a physical drive, such as your C drive. I suspect your UNC path points to a virtual drive & folder combination.
