Sorry, but I've never seen the dialog box in your screen shot. On my system (most of) the options you mention are found directly in the Find dialog box.
How did you access the dialog? Is there a chance you installed (for example) a right-to-left language? Also, which is the specific version of Word 2010 you are using? I have release 14.0.7116.5000 (32 bit), according to File tab | Help. Note that I do see a Set as Default button if I access the Paragraph dialog box via Find (Format, Paragraph), but this is probably a bug (because the corresponding button is greyed out at Format, Font).
