Default How do you save different 'versions' onto the same file (Office 2007)

Hello,
I would like to save multiple versions of the same document, without having to save a new file each time. IE. StoryV1; StoryV2; StoryV3 etc.

I see that in older versions of Word, you used to be able save "Versions". This does not appear to be the case in Office 2007.

Any pointers would be greatly appreciated.

Thanks!
Kevin
