Default Alternate headings and footers

Hello!

I am used Word 2007, and I am attempting to create a large document that has one header on all of the odd pages with a different header on the even pages. To further complicate things, I would like the right header to alternate based upon which chapter it is. So basically, I' like this:
LEFT PAGE...................PGBREAK.................... ................RIGHT PAGE
Name of Book...............PG BREAK.............................Name of Chapter
-----END HEADER-------...........................---------END HEADER------

A note on footers:
I want the introduction to be lower case roman numerals, and then regular numbers resetting one the book begins. So far, no luck on this either.

I have search for these options in the edit footer/header panels, but with word 2007, there are no drop down menus really so I am a bit lost on where to find this information.

Thanks for the help!
