![]() Clicking the ¶ symbol on the Ribbon's Home tab toggles Word's formatting display on/off. With it on, you should see only a single paragraph break (also denoted by ¶) between the paragraph where you inserted the '---' and the paragraph the cursor ends up in after pressing <Enter>. The gap between them is controlled by the paragraph before/after spacing.
