Default strangeness in undo function?

if i perform a series of actions, including typing some lines of text for example, then want to undo anything the typing 'undoes' one character at a time.



although it's not something i ever really paid much attention to before, i seem to remember that the undo drop down list on the quick access toolbar would include being able to undo a whole section of text at once, rather than one character at a time.

i'm not sure if that's a very clear explanation, but if anyone does know what i mean do you have any idea what setting i might have changed, or is my memory faulty here?
