Default Random Substitution of Open Type Fonts

Microsoft Word and Publisher both are randomly substituting what appears to be Arial for open type fonts such as Arno Pro, Garamond Pro, Carlson Pro. If you save and reopen or just keep working, everything fixes back in about 15 minutes. Then another fifteen minutes later, everything goes wonky again. I've read on few other forums where 2010's inability to consistently render open type fonts is causing fits. By 2012 is there a fix anywhere, or at least a well-deserved apology from Microsoft?

For others having this problem, I've read two things that may help. (1) Go to Review > Language > Set Proofing Language - select Hebrew and click okay. Close out all Microsoft programs and reopen. A couple of people have said this fixes the problem, but it does nothing for me. (2) Change the printer. This will cause Word / Publisher to reconsider what it's doing a give you another good 5 to 15 minutes before it completely messes up again.
