Default Custom Fields in Word 2010

This might help.
Select the FILE tag in the top menu toolbar
Click on the Info option
On the right hand side of the screen click the expand arrow next to the Properties text
Select Advanced Properties

You then get the Document Properties menu (as in 2007)
Select the Custom tab
And there you can add or modify your own document fields
