Some of the document properties are offered as content controls at Insert tab | Quick Parts | Document Property. You can insert the same field in multiple locations and all occurrences will all update instantly if you edit one of them. (The corresponding document property field at File tab | Info will also change in the process.)

It seems to me that the interface you describe only works for the docproperties defined by Microsoft i.e. the product author.
I want to use Custom and amend Custom Fields in Word 2010. For instance, when I use the "Edit Field" update dialogue for the "Title" field the interface offers me the opportunity to amend the field value, I cannot find the dialogue to amend a custom field. |

Yes, I'm referring to some built-in properties that make use of content controls. You can do the same with custom content controls, though. Take a look at http://gregmaxey.com/Mapped_Content_Control.htm.

This might help.
Select the FILE tag in the top menu toolbar Click on the Info option On the right hand side of the screen click the expand arrow next to the Properties text Select Advanced Properties You then get the Document Properties menu (as in 2007) Select the Custom tab And there you can add or modify your own document fields |
