I figured it out. I thought I'd post how I managed it here so that future googlers can get the same results

I am using Word 2007, so I created a new document. Then I selected the header, then ticked the "Different First Page" box that shows up in the Options section of the Design tab of the Ribbon.

This worked for me, since I wanted one header on the first page, and no headers on subsequent pages. If you want a header on the first page and then a different header on subsequent pages, follow these steps:

create document > select header on first page> create header > tick 'different first page' (same as above) > insert a page break > create second header > delete page break > save template.

Word will remember the second header even though there is only one page visible at the moment.

Hope this helps, it sure helped me!
