I am using a Word template created by a former employee and some of the table entries have some sort of label or tag associated with them that I've never seen before. Can anyone tell me what these are called and what purpose they serve?

These are Word Content Controls.
They are a very nice feature introduced with Word 2007 accessed through the Developer Tab. Here is one way a limited set of them can be used very effectively: Repeating Data Using Document Property Content Controls and Other Mapped Content Controls |
