I'm working with Visio 2003, so I'm not positive if the menus have changed. All the other menus that I've seen are the same between the versions, though.

I can disable the pre-defined UML data types by opening the UML menu, clicking on Options, clicking the UML Document tab, and unchecking the data types I don't want. Once unchecked, they no longer show in object properties.
